Camp Fire Bananas Foster Recipe
This one will win friends and ensure happy campers. It feels a little bit indulgent, but screw it, you only live once!
1/4 cup butter
2/3 cup dark brown(or white if that’s what you have) sugar
3 1/2 tablespoons dark rum
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
3 bananas, peeled and sliced lengthwise and crosswise
In a large, deep skillet over medium heat, melt butter. Stir in sugar, rum, vanilla and cinnamon. When mixture begins to bubble, place bananas and walnuts in pan. Cook until bananas are hot, 1 to 2 minutes.
Crowd Pleaser: Flambe the bananas right before you take them off by dowsing them in an ounce of rum and then stand back and light. The fire will burn off the alcohol and caramelize the sugar.
Serve at once over your favorite pancakes, waffles or french toast.
Bonus: 1/4 cup coarsely chopped walnuts
Double Bonus: Ice cream for dessert (or breakfast) You’ll need a freezer or dry ice to pull off the ice cream.
